Vegan, Confetti Sprinkle Cake

The perfect celebratory bake to say goodbye to GBBO 2020… or any other occasion that matters to you, I guess something like a birthday would work too!

This cake has a special place in my heart as it was the first vegan cake I ever baked! And what better a day to bake it for than the finale of a show that has a special place in my heart, Bake Off.

With all of the rainbow sprinkles inside, it really does feel like a party when you cut this bad boy open. However, one thing to bare in mind when buying ingredients is the type of sprinkles you’re choosing. It can be slightly trial and error; it’s taken me a few attempts to find a sprinkle that keeps its colour. My top tip is to make sure to pick u a traditional sprinkle rather than beads or confetti. The secret is to making sure the colour doesn’t run and moving quickly after you’ve added them to the mix.

I chose to top this bake with a pink, vanilla buttercream and a cheeky bit of decorating (I was feeling fancy and is it not what Bake Off deserves?!). Strawberry/Fruity flavoured icing would work really well with this cake, or even a bit of jam in the middle would compliment the flavours so nicely!

What I love so much about this cake is how versatile it can be! You could add any flavour of icing or decoration to make it really custom and personal to the occasion. Give it a go and make someone’s day a party!
